Build and mix

Add the N.A. Lucana Amaro (or non-alcoholic amaro/bitter herbal syrup) and orgeat syrup to a cocktail shaker or mixing glass. Pour in the fresh lime juice. If you prefer slightly sweeter, add up to 0.25 tsp simple syrup. Add a dash of Angostura bitters if using. Fill the shaker with ice and shake vigorously for 8–10 seconds to chill and slightly dilute.

Prepare serving glass

Fill a highball or Collins glass with crushed ice or pebble ice up to about 3/4 full.

Combine with ginger beer

Strain the shaken amaro, orgeat and lime mixture over the prepared ice in the serving glass. Top gently with 4 oz chilled ginger beer. Stir once or twice with a bar spoon to combine — avoid overmixing so the ginger beer keeps some effervescence.

Garnish & Finish

Garnish with a lime wheel or wedge on the rim. Add a sprig of fresh mint and a piece of candied or fresh ginger if desired. Optionally, express a lime peel over the drink to release oils, then drop it in.

Serve with a straw and a small stirrer. Encourage the drinker to sip slowly to enjoy the herbal bitterness balanced with bright lime, nutty orgeat, and spicy ginger beer.
