Marinated Shrimp

    Prepare shrimp

    Rinse the shrimp under cold water and pat dry thoroughly with paper towels. If not already done, peel and devein shrimp, leaving tails on or off per preference. Dry shrimp will brown better.

    Make marinade

    In a medium bowl whisk together 2 tablespoons olive oil, 2 tablespoons fresh lemon juice, minced garlic, 1 teaspoon smoked paprika, 1 teaspoon ground black pepper, 1 teaspoon kosher salt, and 1 teaspoon red pepper flakes until combined.

    Marinate

    Add the shrimp to the bowl and toss to coat evenly. Cover and refrigerate for 15–30 minutes (no longer than 1 hour) to let flavors penetrate. If short on time, proceed immediately after tossing.

Cook & Finish

    Preheat pan

    Heat a large skillet over medium-high heat. Add 1 tablespoon extra-virgin olive oil and 2 tablespoons unsalted butter. Allow the butter to melt and foam but not burn; the foam will subside and the pan should be hot.

    Sear shrimp

    Remove shrimp from marinade, letting excess drip off (reserve marinade). Arrange shrimp in a single layer in the hot skillet so they have space; you may need to cook in two batches. Cook undisturbed for 1¾–2 minutes until the underside turns pink and golden.

    Flip and finish

    Flip shrimp and cook for another 1–1½ minutes until opaque and firm to the touch. Add the reserved marinade to the pan and cook for 30–45 seconds, spooning sauce over the shrimp, until the garlic is fragrant and the sauce slightly thickens. Total cook time per batch ~3–3½ minutes to avoid overcooking.

    Add herbs and lemon

    Turn off the heat, stir in 1 tablespoon chopped fresh parsley and squeeze 1–2 teaspoons fresh lemon juice over the shrimp. Taste and adjust seasoning with a pinch of salt or a bit more lemon if desired.

    Transfer shrimp to a serving plate. Garnish with remaining parsley and lemon wedges. Serve immediately with crusty bread, rice, or pasta to soak up the pan sauce.
