Remoulade Sauce

Make sauce
In a medium bowl combine 1/2 cup mayonnaise, 1 tsp Creole or Dijon mustard, 2 tbsp pickle relish, 1/2 tsp hot sauce, 1 tsp lemon juice, 1/2 tsp Worcestershire sauce, 1/2 tsp paprika, 1/8 tsp cayenne, 1/4 tsp salt and 1/8 tsp black pepper. Whisk until smooth, taste and adjust seasoning or heat. Cover and chill while you prepare the shrimp (at least 15 minutes).

Brine/marinade
Place peeled and deveined shrimp in a bowl. Pour 1 cup buttermilk and 1 tbsp hot sauce over the shrimp, stir to coat. Cover and refrigerate 20–30 minutes. This tenderizes and flavors the shrimp.

Prepare coating
While shrimp marinates, whisk together 1 cup all-purpose flour, 1/4 cup cornstarch, 1 tsp salt, 1/2 tsp black pepper, 1 tsp paprika, 1/4 tsp cayenne and 1/2 tsp garlic powder in a shallow bowl or rimmed plate.

Heat oil
Pour about 1 cup vegetable oil into a heavy skillet (cast iron) to reach ~1/2 inch depth. Heat over medium-high until oil reaches 350°F (175°C) or a pinch of flour sizzles immediately.

Dredge and fry
Remove shrimp from buttermilk, letting excess drip off. Working in a single layer (do not overcrowd), dredge shrimp in the seasoned flour mixture, pressing gently to adhere. Fry shrimp in batches 1–2 minutes per side until golden brown and cooked through (internal temp ~145°F). Transfer to a wire rack set over a baking sheet or paper towels to drain. If necessary, keep warm in a 200°F oven while finishing remaining shrimp.

Assemble Po' Boy
Spread a generous layer (about 2–3 tbsp) of the remoulade sauce on both cut sides of the toasted bread. Pile shredded lettuce on the bottom half (about 1 cup), arrange tomato slices on top and season tomatoes with 1/4 tsp kosher salt and 1/8 tsp black pepper. Add fried shrimp in a single layer over the tomato and lettuce (use all shrimp). Add pickles if desired. Close the sandwich and press lightly.

Serve
Cut the sandwich into portions (2 if sharing). Serve immediately while shrimp are hot and crispy with extra remoulade on the side. Estimated to serve 2 people.
