    Prepare and marinate

    Pat the salmon fillets dry with paper towels and place them skin-side down in a shallow dish or rimmed baking sheet. In a small bowl, whisk together 2 tbs olive oil, 2 tbs lemon juice, 1 tbs soy sauce, 1 tbs honey, minced garlic, grated ginger, 1 tsp salt and 1 tsp black pepper until combined. Pour the marinade over the fillets, rubbing gently to coat both top and sides. Cover and refrigerate for 15–30 minutes (up to 2 hours for more flavor).

    Bring to room temperature

    About 15 minutes before cooking, remove the salmon from the refrigerator to come closer to room temperature. This helps cook the fillets evenly.

    Preheat and oil the pan

    Preheat your oven to 400°F (205°C) if finishing in the oven, or heat a large oven-safe skillet over medium-high heat if searing then oven-finishing. Add 1 tbs olive oil to the skillet and let it shimmer.

    Sear the salmon

    Remove excess marinade (reserve marinade for spooning or discard) and place the fillets in the hot skillet, skin-side down. Press gently with a spatula for about 15 seconds to keep the skin flat. Cook 3–4 minutes without moving, until the skin is crisp and releases easily from the pan.

    Finish cooking

    If the fillets are thick or you prefer a gentler cook, transfer the skillet to the preheated oven and roast for 5–8 minutes until the salmon reaches an internal temperature of 125–130°F (52–55°C) for medium-rare to medium. For stovetop-only, lower heat to medium-low, cover with a lid, and cook an additional 4–6 minutes until done to your liking.

    Rest and garnish

    Remove salmon from the heat and let rest for 2–3 minutes. Top each fillet with a lemon slice and sprinkle with chopped dill or parsley. Spoon any reserved marinade warmed briefly over the fillets if desired. Serve immediately.
