Make the roux
In a heavy-bottomed Dutch oven or large pot, heat vegetable oil over medium heat. Add the flour and stir constantly with a wooden spoon or whisk. Cook the roux, stirring and scraping the bottom continuously, until it reaches a deep brown color (similar to chocolate), about 25–35 minutes. Reduce heat if it starts to smoke. This deep roux provides the gumbo's characteristic flavor—be patient and don’t rush.

Once roux is deep brown, immediately add the unsalted butter and stir until melted to loosen the roux. Remove pot from direct heat for a moment to prevent scorching when adding vegetables.

Add the chopped onion, diced green bell pepper, and diced celery to the roux. Return to medium-low heat and cook, stirring frequently, until the vegetables are softened and well coated in the roux, about 8–10 minutes.

Add the minced garlic and cook 1–2 minutes more until fragrant but not brown.

Stir in the tomato paste, cooking 1–2 minutes to remove its raw edge. Gradually whisk in the chicken stock and water to the pot to incorporate the roux into the liquid, smoothing any lumps. Increase heat to bring mixture to a gentle simmer.

Add the bay leaves, Worcestershire sauce, smoked paprika, dried thyme, salt, black pepper, and cayenne pepper. Simmer uncovered for 25–30 minutes so flavors meld and the gumbo slightly thickens from the roux.

Continue simmering the gumbo with sausage and chicken for 20–25 minutes, until chicken is cooked through and tender. Taste and adjust seasoning with additional salt, pepper, or cayenne if desired.

Five minutes before serving, add the shrimp and crab meat to the pot. Cook until shrimp are pink and opaque, about 3–5 minutes. Do not overcook seafood.
Thickening & Finish

If you prefer a slightly thicker gumbo, mix the cornstarch with the cold water to make a slurry and stir into the simmering gumbo, cooking 1–2 minutes until it slightly thickens. (Optional — the roux usually provides sufficient thickness.)

Remove bay leaves. Stir in chopped parsley and two-thirds of the sliced green onions, reserving the rest for garnish. If using file powder, sprinkle it in now (1 tsp) and stir once; do not overboil after adding file or it can become stringy.

Ladle gumbo over hot cooked white rice in bowls. Garnish with remaining green onions and additional parsley. Serve hot with crusty bread or cornbread on the side.
