    Prepare the boiling liquid

    Fill a large stockpot with 4 liters of water. Add 1 cup coarse sea salt, 3 bay leaves, 1 tablespoon whole black peppercorns, 6 smashed garlic cloves, and the halved lemon. Bring to a rolling boil over high heat with the lid on.

    Humanely handle crabs

    While the water comes to a boil, keep the live crabs chilled (in a cooler or refrigerator) and handle them with gloves or tongs. If desired, place crabs in the freezer for 15–20 minutes to calm them before cooking.

    Cook the crabs

    When the water is at a full rolling boil, pick up each crab by the back shell with tongs and carefully lower into the pot, belly-side down. Replace the lid and return to a boil. Once boiling again, cook for 12–15 minutes for medium-large crabs (Dungeness) or 8–10 minutes for smaller blue crabs. The shell will turn bright orange/red and the meat will become opaque.

    Rest and cool

    When cooked, remove crabs with tongs and transfer to a large platter. Let rest for 5 minutes so juices redistribute and the crabs cool slightly for handling.

    Optional: Quick steam finish

    If you prefer a slightly firmer texture, you can return the drained crabs to the pot off the heat, cover, and let them steam in residual heat for 3–4 minutes before serving.

Serving & Dipping Sauce

    Prepare garlic butter sauce

    Melt 8 tablespoons unsalted butter in a small saucepan over low heat. Add 2 teaspoons minced garlic and cook gently for 30–45 seconds until fragrant (do not brown). Stir in 2 tablespoons fresh lemon juice, 2 tablespoons chopped parsley, 2 teaspoons Old Bay seasoning, 1 teaspoon coarse sea salt, and 1 teaspoon cracked black pepper. Keep warm on the lowest heat setting.

    Crack and pick the crab

    Transfer crabs to the serving platter. Use kitchen shears or a crab cracker to remove the top shell, scoop out the gills (dead man’s fingers) and intestine tract, and break the body in half. Crack the claws and legs to expose meat. Place picked meat and shells on the platter for guests to access. Save any rich tomalley (liver) if desired; it’s edible and flavorful.

    Serve

    Serve the crabs hot with warm garlic butter on the side and lemon wedges. Provide extra napkins, a bowl for shells, and crab tools. Sprinkle a little extra Old Bay over the platter if desired.

    Use tongs or a long-handled spoon to lower and remove crabs safely. Use kitchen shears or crab crackers to open shells and access meat. A small saucepan keeps the dipping butter warm while you serve.
