Prepare Shrimp & Dredging

    Trim and pat dry

    Rinse the shrimp if needed, then thoroughly pat dry with paper towels. Leave the tail on for presentation, but remove any remaining shell. Make a small shallow cut along the back and remove the vein if not already deveined.

    Arrange three shallow bowls or wide plates: one with 0.5 cups flour and 0.25 tsp salt (dredging flour), one with the beaten egg mixture, and one with the coconut/panko mixture. This ensures an efficient 3-step coating (dredge, egg, coconut).

    Make egg mixture

    In a medium bowl whisk together 2 large eggs, 1/2 cup coconut milk, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder, 1/2 tsp paprika, and 1/8 tsp cayenne (if using) until smooth.

    Make coconut coating

    In a shallow bowl combine 1.25 cups unsweetened shredded coconut with 1/2 cup fine cornmeal or panko and 1 cup all-purpose flour. Toss to distribute the coconut evenly through the dry mix. (Reserve the separate 1 cup flour only if you prefer separate dredge; here it's mixed to ensure better adhesion and crunch.)

Coat Shrimp

    Working in batches of 6–8 shrimp (to avoid crowding), lightly dredge each shrimp in the dredging flour, shaking off excess. Dip the shrimp into the egg-coconut milk mixture, letting excess drip back into the bowl. Press the shrimp into the coconut/panko mixture, coating thoroughly and pressing gently so the coconut adheres well. Place coated shrimp onto a wire rack set over a sheet pan. Repeat until all shrimp are coated.

    If time allows, refrigerate the coated shrimp uncovered for 10–15 minutes to help the coating set and reduce falling-off during frying.

Fry Shrimp

    Pour about 3–4 cups neutral oil into a deep heavy skillet, Dutch oven, or deep fryer so there is 1–1.5 inches of oil. Heat to 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of bread or a tiny bit of coating into the oil — it should sizzle and brown in about 45–60 seconds.

    Fry in batches: Carefully add 6–8 shrimp, flat side down, without overcrowding. Fry for 1.5–2.5 minutes per side until golden brown and the shrimp turn opaque. Use a slotted spoon or spider to flip and remove shrimp. Total fry time per shrimp should be about 3–4 minutes depending on size. Avoid overcooking—shrimp cook quickly.

    Drain: Transfer fried shrimp to a wire rack or paper towel-lined sheet pan. Sprinkle a light pinch of salt over the shrimp immediately while hot to season. Keep warm in a 200°F (95°C) oven on a rack if frying multiple batches so they stay crisp.
