Ensure wild salmon is sashimi-grade and kept cold. Using a sharp knife, thinly slice the wild salmon into even, translucent sheets and arrange on a chilled platter.

Thinly slice the cultivated salmon into ribbons and fan beside the wild salmon to create a layered crudo appearance.

Prepare the apple and grapefruit

Core and julienne the green apple into matchsticks. Peel and segment the grapefruit, removing the membranes to yield juicy segments.

Dressing
