Pat ribs and prep
Remove the thin silver skin from the back of the ribs. Pat dry with paper towels.

Mix dry rub
In a bowl, whisk together light brown sugar, paprika, kosher salt, black pepper, chili powder, garlic powder, onion powder, ground cumin, and cayenne pepper.

Make chipotle prickly pear barbecue sauce
In a medium saucepan, combine prickly pear juice, ketchup, brown sugar, apple cider vinegar, Worcestershire, and lime juice. Bring to a simmer.

Season and finish sauce
Stir in minced chipotle peppers in adobo sauce. Add garlic powder, onion powder, salt, and black pepper. Simmer gently 12-18 minutes until slightly thickened, stirring occasionally.

Alternatively, finish on a hot grill or under a broiler 2-4 minutes per side to add char and depth.
