    Remove the thin membrane from the bone side of the ribs by sliding a knife under the membrane and pulling it off with a paper towel.

Dry Rub

    Make the dry rub

    In a bowl, whisk together brown sugar, smoked paprika, kosher salt, black pepper, garlic powder, onion powder, chili powder, chipotle powder, and cayenne pepper until evenly mixed.

    Season the ribs

    Pat ribs dry and rub the spice blend generously on both sides, pressing into the meat. Let sit at room temperature for 15-20 minutes or refrigerate covered for 1-2 hours to meld flavors.

Chipotle Prickly Pear Barbecue Sauce

    Prepare the sauce

    In a medium saucepan over medium heat, combine prickly pear juice, ketchup, apple cider vinegar, brown sugar, honey, minced garlic, onion powder, chipotle peppers in adobo, adobo sauce, salt, pepper, and water. Stir to combine.

    Simmer and finish sauce

    Simmer 15-20 minutes, stirring occasionally, until the mixture thickens to a barbecue sauce consistency. If desired, whisk in a few drops of liquid smoke for a smoky note. Taste and adjust sweetness or acidity as needed.

    Preheat oven to 275°F (135°C). Optionally set up a grill for indirect cooking at 250-275°F (120-135°C).

    Place ribs on a large sheet of foil with a splash of water. Wrap tightly to form a sealed packet. Bake in the preheated oven for 2.5 to 3 hours, until the meat is tender and pulls away from the bone.

    Carefully unwrap the ribs, brush with a generous coat of the chipotle prickly pear barbecue sauce, and return to the oven or grill for 20-30 minutes, glazing every 10 minutes.
