Method

Oysters on the Half-Shell

    Set up ice bed and prep oysters

    Spread a generous bed of crushed ice on a large platter to keep seafood cold. Rinse each oyster under cold running water and keep them on ice until you are ready to shuck.

    Shuck oysters

    With a sharp oyster knife, carefully shuck each oyster over the half shell, preserving the liquor (the brine) in the shell. Place each shucked oyster on top of the ice bed, cup side down.

    Arrange for serving

    Once all oysters are shucked, arrange them evenly on the platter with their shells stabilized on the ice. Keep chilled until service.

Mignonette Dressing

    Make the dressing base

    In a small bowl, combine minced shallots, red wine vinegar, and white wine vinegar. Whisk together until well integrated.

    Finish and rest

    Stir in fresh lemon juice, cracked black pepper, and salt. Let the dressing rest for 5–10 minutes to meld flavors.

To Serve

    Plate and garnish

    Just before serving, optionally drizzle a small amount of mignonette on each oyster or serve the dressing on the side in a small dish for guests to add as they wish.

    Garnish with lemon

    Arrange the lemon wedges on the platter for guests to squeeze over the oysters.
