Chill the glass
Place a pint glass in the freezer for a few minutes or fill with ice to chill while preparing the drink.

Muddle mint
In the pint glass, add 8 fresh mint leaves, 20 ml lime juice, and 15 ml simple syrup. Gently muddle with a muddler or the back of a spoon just enough to release the essential oils and fragrance without tearing the leaves.

Add orange juice and ice
Pour 120 ml orange juice over the muddled mint. Add 0.5 cups of crushed ice to the glass to begin building the drink.

Top with soda and mix
Top the glass with 180 ml soda water. Stir gently with a long spoon to combine the ingredients without losing too much fizz.

Garnish and serve
Garnish with a lime wedge on the rim and a sprig of mint. Serve the drink on the rocks in the pint glass.
