    Sauté aromatics and start roux

    In a large pot over medium heat, melt 2 tablespoons butter. Add the diced onion and celery; sauté until translucent, about 5-7 minutes.

    Make the roux

    Add minced garlic and sprinkle in flour. Cook, whisking constantly, for 1-2 minutes until the flour is lightly toasted.

    Create the creamy base

    Slowly whisk in milk (2 cups) and stock (2 cups) to form a smooth base. Bring to a gentle simmer.

    Add potatoes

    Stir in diced potatoes (2 cups) and simmer until they are tender, about 10-15 minutes.

    Add corn and oyster liquor

    Stir in corn kernels (1 cup) and oyster liquor (0.5 cups). Simmer for 3-4 minutes.

    Add oysters

    Gently fold in oyster meat (1.5 cups) and warm through for 2-3 minutes; avoid boiling the oysters.

    Finish with cream

    Stir in heavy cream (1 cup) and simmer until the chowder thickens slightly, about 3-4 minutes.

    Season and garnish

    Season with salt (0.5 tsp) and white pepper (0.25 tsp). Stir in chopped parsley (2 tbsp).

    Serve with oyster crackers

    Ladle the chowder into bowls. Top with additional parsley if desired and serve with oyster crackers on the side.
