Rinse potato sticks in cold water and soak for 15-20 minutes to remove excess starch.

In a large bowl, toss the sticks with 2 tbs cornstarch until evenly coated.
First fry and drying

In a deep, heavy pot or fryer, heat vegetable oil to 350-375°F (175-190°C).

Fry potato sticks in batches for 2-3 minutes until pale and flexible. Remove with a slotted spoon and drain on paper towels.
Second fry and season

Increase oil temperature to 375-400°F (190-205°C). Return potatoes to the oil and fry for another 1-2 minutes until crisp and deep golden.

Season immediately while hot: sprinkle with 1.5 tsp salt, 0.5 tsp pepper, 0.5 tsp paprika, and 0.5 tsp garlic powder. Toss to coat.
