GRILL PREP AND ASSEMBLY

    Shuck oysters and prepare for grilling

    Shuck Gulf oysters on the half-shell. Keep each oyster in its shell with the natural liquor and arrange on a tray or bed of crushed ice to keep cold until ready to grill.

    Make garlic herb butter

    In a small saucepan over low heat, melt the unsalted butter. Stir in minced garlic, lemon juice, chopped parsley, hot sauce, salt, and pepper until just combined and fragrant. Keep warm but not hot.

    Preheat grill

    Preheat the grill to high heat, about 450-500°F (230-260°C). If using charcoal, let the coals burn to a bright, ashy glow.

    Top oysters with butter

    Place the shucked oysters back on their half-shells on a grill-safe tray. Spoon a small amount of the warm garlic herb butter over each oyster, just enough to coat without overflowing.

    Grill oysters

    Transfer the tray to the grill. Close the lid and cook until the edges of the oysters begin to curl and the butter sizzles, about 3-5 minutes. Keep a close eye to prevent overcooking; oysters should stay plump and glossy.

    Finish and serve

    Remove from grill. If desired, garnish with extra chopped parsley and serve with lemon wedges on the side. Offer additional hot sauce or a pinch of sea salt at the table for guests who like more heat.
