Bread, Butter & Toast Prep

    Prepare baguette

    Cut the baguette in half lengthwise, keeping it hinged so the halves stay connected.

    Butter the bread

    Spread softened unsalted butter on the outer sides of both halves.

    Toast bread base

    Heat a heavy skillet over medium heat and place the bread halves butter-side down in the skillet. Toast until lightly golden, about 2-3 minutes.

Cheeses

    Layer cheddar

    On the bottom half of the baguette, arrange the white cheddar slices in an even layer.

    Add gorgonzola

    Crumble the gorgonzola over the cheddar, distributing evenly.

    Season cheese

    Lightly season the cheese with a pinch of salt and black pepper.

Caramelized onions & seasonings

    Caramelize onions

    In a small skillet, heat olive oil over medium-low. Add sliced yellow onion and cook slowly, stirring often. Add sugar and a pinch of salt. Continue cooking 20-25 minutes until deeply caramelized and amber in color.

    Rest onions

    Turn off heat and set caramelized onions aside.

Tomato & Finish

    Prepare tomato

    Slice tomato into 1/4-inch rounds and lightly salt.

    Assemble sandwich & top

    Spread the caramelized onions over the cheese. Layer tomato slices on top of onions. Place the top bread half over the tomatoes, with buttered side facing up.

    Grill & melt

    Return the sandwich to the skillet. Grill, pressing gently, until the bread is deep golden and the cheese is melted, about 4-6 minutes per side. Flip once.

    Serve

    Remove from skillet, let rest 1-2 minutes, then cut and serve immediately.
