Preheat grill and season scallops
Preheat grill to medium-high (about 425-450°F / 220-230°C). Pat the 16 large sea scallops dry with paper towels. In a small bowl, mix 0.5 tsp kosher salt and 0.25 tsp black pepper. Lightly season the scallops on all sides with the salt-and-pepper mixture.

Prepare bacon wraps
Cut bacon slices as needed. Wrap a half-slice of bacon around each scallop and secure with a toothpick, ensuring the seam is on the bottom to prevent unwrapping during grilling.

Oil and ready for grill
Brush each bacon-wrapped scallop with 1/8–1/4 tsp olive oil (or brush all over with 1 tablespoon total). This helps the bacon crisp and prevents sticking. If desired, lightly oil the grill grates.

Finish and serve
Remove from grill and let rest 2 minutes. Remove toothpicks. Zest 1 teaspoon of lemon over the hot scallops and garnish with 1 tablespoon chopped fresh parsley. Serve immediately.
