OYSTERS PREP & BEER-BATTER

Prep oysters
Line a tray with paper towels. Pat the shucked Willapa Bay oysters dry with paper towels to remove excess moisture.

Pour vegetable oil into a heavy pot or Dutch oven to a depth of about 2 inches and heat to 365°F (185°C).

In a large bowl, whisk together all-purpose flour, cornmeal, baking powder, garlic powder, onion powder, paprika, salt, and black pepper until evenly combined.

Dip each oyster into the wet mixture, allowing excess to drip off, then dredge in the dry batter until fully coated.

Carefully fry the battered oysters in batches, turning once, until golden brown and crisp, about 2–3 minutes per batch.

Transfer fried oysters to a rack or paper towels to drain. Lightly season with salt while hot.

Serve immediately with lemon wedges and tartar sauce on the side.
