PRICKLY PEAR YOGURT DIP

Method

SHARABLES

  1. 1

    Prep berries

Rinse all berries under cold water and pat dry. Hull and halve the strawberries; rinse blueberries and pat dry.

  2. 2

    Slice pineapple and mango

Cut pineapple into even bite-sized chunks. Peel and dice mango into similar-sized chunks.

  3. 3

    Prepare kiwis, grapes, and orange

Peel kiwis and slice into rounds or half-moons. Rinse grapes and halve if desired. Peel orange and segment or cut into uniform pieces.

  4. 4

    Arrange fruit

On a large serving platter, arrange the fruit in colorful sections with some space in the center for the dip.

PRICKLY PEAR YOGURT DIP

  1. 5

Make the prickly pear yogurt dip

In a medium bowl, whisk together 1 cup plain Greek yogurt, 0.5 cup prickly pear puree, 2 tbs honey, 1 tsp vanilla extract, and 0.25 tsp salt until smooth. If prickly pear puree contains seeds, blend and strain for a smoother texture.

  2. 6

    Chill the dip

Cover and refrigerate the dip for 10–15 minutes to let flavors meld and to achieve a thicker, scoopable consistency.

  3. 7

    Serve

Transfer the dip to a small serving bowl and place it in the center of the fruit platter. Garnish with a few mint leaves if desired.
