    Prep the strawberries

    Rinse the strawberries, pat dry, and hull the tops using a small knife or strawberry huller, leaving a small cavity for filling.

    Make the cheesecake filling

    In a medium bowl, beat the softened cream cheese with the powdered sugar until smooth and creamy. Beat in the vanilla extract and lemon juice until fully incorporated and silky.

    Whip the cream

    In a separate bowl, whip the heavy cream until soft peaks form.

    Combine filling

    Gently fold the whipped cream into the cream cheese mixture until fully incorporated and light.

    Fill the strawberries
