    Prep calamari

    Pat calamari dry with paper towels. If using tubes, slice into 1-inch (2.5 cm) rings. Lightly season with a pinch of salt.

    Make dredge mix

    In a bowl, whisk together 1 cup cornstarch, 1 tsp salt, 0.5 tsp black pepper, 1 tsp paprika, and 0.5 tsp garlic powder until evenly combined.

    Dredge calamari

    Toss calamari rings in the dredge until lightly coated. Place on a rack and let excess coating fall off while heating oil.

    Prepare jalapeño batter

    In another bowl, whisk together 1 cup flour, 0.25 cup cornstarch, 0.5 tsp baking powder, and 0.5 tsp salt. Gradually whisk in 0.5 cup beer or sparkling water until the batter is thick but pourable.

    Slice and batter jalapeños

    Slice jalapeños into rings (remove seeds for milder heat). Dip rings into the batter, letting excess batter drip off.

    Heat oil for frying

    Pour oil into a heavy pot or fryer and heat to 350-375°F (175-190°C).

    Fry jalapeño rings

    Fry jalapeño rings in batches until golden and crisp, about 2-3 minutes per batch. Drain on paper towels.

    Fry calamari

    Fry calamari in batches in the hot oil until crisp and golden, about 2-3 minutes per batch. Remove with a slotted spoon and drain on paper towels.

    Make sauce

    In a small saucepan over medium heat, combine ketchup, sweet chili sauce, honey, rice vinegar, soy sauce, minced garlic, and water. Simmer 5-7 minutes until slightly thickened, adjust with more water if needed.

    Assemble & plate

    Lightly toss a portion of calamari with a small amount of warm sauce or drizzle sauce on the plate. Arrange fried jalapeño rings around the calamari. Spoon additional sauce over the rings if desired.

    Finish & garnish

    Top with sliced sweet drop peppers and optional green onions. Serve hot with extra sauce on the side.
