Chicken Preparation
1. Marinate the Chicken
In a large bowl, combine soy sauce, sesame oil, honey, minced garlic, grated ginger, and black pepper to create the marinade.
2. Add Chicken
Add the chicken thighs into the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
3. Preheat the Grill
Preheat the grill to medium-high heat (about 200°C or 400°F).
4. Skewer the Chicken
Thread the marinated chicken thighs onto skewers, leaving some space between pieces for even cooking.
5. Grill the Chicken
Place the skewers on the preheated grill and cook for about 5-7 minutes on each side, or until the chicken is fully cooked and has nice grill marks.
6. Garnish
Remove the skewers from the grill and garnish with chopped green onions.

Serve the ssamjang sauce alongside the grilled chicken for dipping.
