Method
Prepare Sushi Rice
Rinse the Rice
Place the sushi rice in a fine-mesh strainer and rinse it under cold water until the water runs clear. This removes excess starch.
Cook the Rice
Combine the rinsed sushi rice and water in a rice cooker. Cook according to the manufacturer's instructions until the rice is tender.
Season the Rice
In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until the sugar and salt dissolve. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture until well combined. Allow the rice to cool to room temperature.
Prepare Tuna
Slice the Tuna
Using a sharp knife, cut the fresh sushi-grade tuna into thin slices, about 1/4 inch thick. Aim for uniform pieces for better presentation.
Assemble Nigiri
Form the Rice
Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and mold it into a small oval shape, about the size of your palm.
Add Tuna
Place a slice of the tuna on top of each rice mound, gently pressing it down to adhere.
Serve
Serve the nigiri with a small amount of wasabi and soy sauce on the side for dipping.
