    Prepare the Dashi

    In a pot, bring the dashi stock to a simmer over medium heat.

    Cook the Udon Noodles

    Add udon noodles to the dashi and cook according to package instructions, usually about 5-7 minutes. Stir occasionally.

    Sauté the Vegetables

    In a separate pan, heat sesame oil over medium heat. Add minced garlic and ginger, and sauté for 1-2 minutes until fragrant. Add local mushrooms and bok choy, cooking until softened.

    Combine Ingredients

    Once the noodles are cooked, drain and add them to the sautéed vegetables. Pour in the soy sauce and chili oil, and sprinkle with five spice powder. Toss to coat everything evenly.

    Prepare the Cashews

    In a dry pan, toast the cashews over medium heat for 3-4 minutes until golden and fragrant. Remove from heat and let cool slightly.

    Plate the spicy udon noodles, topping with toasted cashews and chopped green onions. Serve hot.
