Prepare the Filling

In a mixing bowl, combine the finely chopped Wagyu beef, foie gras, minced garlic, minced ginger, green onions, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are thoroughly combined.

Assemble the Gyozas

Place a gyoza wrapper on a clean surface. Spoon about 1 tablespoon of the filling into the center of the wrapper. Moisten the edges of the wrapper with water, then fold over to create a half-moon shape. Pinch the edges to seal tightly. Repeat with the remaining wrappers and filling.

Cook the Gyozas

In a non-stick skillet, heat a small amount of oil over medium heat. Place the gyozas in the skillet and cook for 2-3 minutes until the bottoms are golden brown. Add a splash of water to the skillet, cover, and steam for an additional 3-4 minutes until the gyozas are cooked through.

Prepare the Sauces

While the gyozas are cooking, prepare the doubanjiang sauce and goma dare. For the doubanjiang sauce, mix doubanjiang with a bit of water to achieve desired consistency. For goma dare, combine tahini, soy sauce, and a splash of sesame oil.

Serve

Serve the gyozas hot with doubanjiang sauce and goma dare on the side. Garnish with micro leek.
