Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the water and the egg. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.

Rest the Dough
Wrap the kneaded dough in plastic wrap or cover it with a damp cloth and let it rest for at least 30 minutes at room temperature.

Prepare the Filling
In a medium bowl, combine the farmer's cheese, finely chopped scallions, sour cream, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Shape the Vareniki
On a floured surface, roll out the rested dough to about 1/8 inch thick. Cut circles using a round cutter or a glass, about 3 inches in diameter. Place about 1 tablespoon of filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges to seal, ensuring there are no air pockets.

Cook the Vareniki
Bring a large pot of salted water to a boil. Carefully drop the dumplings into the boiling water, ensuring not to overcrowd the pot. Cook for about 5-7 minutes or until they float to the surface and are cooked through. Use a slotted spoon to remove them from the water.
