Prepare the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the egg and water. Mix until a soft dough forms. If the dough is too sticky, add a little extra flour.
Knead the Dough
On a floured surface, knead the dough for about 5 minutes until smooth. Cover with a clean kitchen towel and let it rest for 30 minutes.
Make the Filling
In another bowl, mix together the farmer's cheese, chopped scallions, and a pinch of salt. Ensure that the mixture is well combined and set aside.
Roll Out the Dough
After resting, divide the dough into two portions. Roll out each portion on a floured surface to about 1/8 inch thickness.
Cut and Fill the Dumplings
Using a round cutter or a glass, cut out circles from the rolled-out dough. Place a teaspoon of the cheese and scallion filling in the center of each circle. Fold the dough over and press the edges to seal tightly. Ensure that there are no air pockets.
Cook the Dumplings
Bring a large pot of salted water to a boil. Carefully add the dumplings in batches, making sure not to overcrowd the pot. Cook for about 5-7 minutes or until they float to the surface.
Serve
Remove the dumplings with a slotted spoon and drain. In a skillet, melt the butter and toss the cooked dumplings in the butter until lightly browned. Serve warm with sour cream on the side.
