Dough Preparation

    Mixing the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and add the egg and water. Mix until a rough dough forms.

    Kneading the Dough

    Transfer the dough onto a floured surface and knead for about 10 minutes, or until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Filling Preparation

    Preparing the Filling

    In a medium bowl, combine the pitted sour cherries, sugar, cornstarch, and lemon juice. Gently mix until the cherries are coated evenly. Set aside.

Assembly and Cooking

    Rolling Out the Dough

    After the dough has rested, roll it out on a floured surface to about 1/8-inch thickness. Use a round cutter to cut out circles, approximately 3 inches in diameter.

    Filling the Vareniki

    Place a teaspoon of the cherry mixture in the center of each dough circle. Fold the dough over to create a half-moon shape and pinch the edges to seal tightly.

    Cooking the Vareniki

    Bring a large pot of salted water to a boil. Carefully drop the vareniki into the boiling water, cooking in batches. Once they float to the surface, let them cook for an additional 3-5 minutes. Remove with a slotted spoon.

Serving

    Serve the vareniki hot, topped with a dollop of sour cream and garnished with chiffonaded mint and basil.
