Prepare the Salmon Roe Dip
In a medium bowl, combine the house-cured salmon roe, sour cream, finely chopped sweet onion, fresh dill, lemon juice, salt, and black pepper. Gently fold the ingredients together until well mixed. Be careful not to break the roe too much to maintain its texture. Taste and adjust seasoning if necessary.

Prepare the Lavash Chips
Preheat the oven to 350°F (175°C). Cut the lavash bread into triangles or strips as preferred. Arrange them on a baking sheet in a single layer. Drizzle with olive oil and sprinkle with a pinch of salt. Bake in the preheated oven for about 10-12 minutes or until they are golden and crispy, turning halfway through.

Serve
Once the lavash chips are done baking, remove them from the oven and allow them to cool slightly. Serve the salmon roe dip in a bowl alongside the lavash chips for dipping.
