Prepare the Meatball Mixture
In a large mixing bowl, combine the ground beef, ground pork, cooked rice, finely chopped cabbage, onion, minced garlic, egg, salt, black pepper, and paprika. Mix thoroughly until all ingredients are well incorporated.

Form the Meatballs
Preheat the oven to 400°F (200°C). Using your hands, form the mixture into meatballs, about 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.

Bake the Meatballs
Drizzle the meatballs with olive oil and bake in the preheated oven for 25-30 minutes, or until they are cooked through and golden brown.

Prepare the Sauce
In a food processor, combine the toasted walnuts, roasted red peppers, minced garlic, cilantro, red wine vinegar, salt, black pepper, and olive oil. Process until smooth, adjusting seasoning to taste.

Assemble the Meatball Subs
Slice the sub rolls in half and lightly toast them if desired. Place 2-3 meatballs on the bottom half of each roll. Generously top with walnut adjika sauce and sprinkle shredded Litovsky cheese over the top.

Melt the Cheese
Place the assembled subs on a baking sheet and return to the oven. Bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
