    Prepare the Rabbit

    Season the rabbit hindquarters with salt and black pepper. Heat olive oil in a large clay pot over medium heat.

    Sear the Rabbit

    Add the rabbit hindquarters to the pot and sear them on all sides until golden brown, about 5-7 minutes. Remove from the pot and set aside.

    Sauté Aromatics

    In the same pot, add minced garlic and sauté for 1-2 minutes until fragrant.

    Add Porcini and Smetana

    Add the dried porcini mushrooms (rehydrated in warm water and drained) and stir for another minute. Then add smetana and mix well.

    Combine Ingredients

    Return the seared rabbit to the pot and gently nestle it into the smetana mixture. Add the sour cherries and fresh thyme.

    Braise the Rabbit

    Cover the pot with a lid and reduce the heat to low. Let it braise for about 1.5 hours, or until the rabbit is tender and cooked through.

    Prepare Draniki

    While the rabbit is braising, prepare the draniki. Grate potatoes, mix with salt, and fry in a skillet with oil until crispy and golden on both sides.

    Once the rabbit is ready, serve it hot with the creamy sauce and crispy draniki on the side.
