Final Assembly and Cooking
Shape Piroshki
Once the dough has risen, punch it down and divide it into small balls (about the size of a golf ball). Roll each ball into a small circle on a floured surface.
Fill and Seal
Place a spoonful of the potato filling in the center of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.
Heat Oil
In a large frying pan, heat vegetable oil over medium heat.
Fry Piroshki
Carefully place the filled piroshki in the hot oil, frying in batches until golden brown on both sides, about 3-4 minutes per side.
Drain and Serve
Remove the piroshki from the oil and drain on paper towels. Serve warm.
