Dumpling Preparation

    Make the Dough

    In a large bowl, combine the all-purpose flour and salt. Create a well in the center and add the eggs and water. Mix until a dough forms. Knead the dough for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for at least 30 minutes.

    Prepare the Filling

    In a separate bowl, mix the ground beef or pork, finely chopped onion, minced garlic, and salt and pepper to taste. Ensure the mixture is well combined.

    Roll Out the Dough

    After the dough has rested, divide it into smaller portions. Roll out each portion on a floured surface until it is about 1/8 inch thick.

    Cut and Fill Dumplings

    Using a round cutter or a glass, cut circles from the rolled dough. Place a teaspoon of the filling in the center of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal. Make sure there are no air pockets.

    Boil the Dumplings

    Bring a large pot of salted water to a boil. Drop the dumplings into the boiling water, being careful not to overcrowd the pot. Boil for 5-7 minutes or until the dumplings float to the top.

    Prepare the Dressing

    In a small saucepan, melt the butter and mix in the vinegar. Stir well and remove from heat.

    Serve the Dumplings

    Using a slotted spoon, remove the dumplings from the pot and place them onto a serving platter. Drizzle the butter and vinegar dressing over the top. Serve warm with smetana on the side.

    Optional Pan-Frying

    For a crispy texture, heat a non-stick pan over medium heat, and add a tablespoon of butter. Place the boiled dumplings in the pan and fry until golden brown on both sides before serving.
