Cook the Freekeh

In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of cracked freekeh, reduce heat to low, cover, and simmer for about 20-25 minutes until the grains are tender and the water is absorbed. Fluff with a fork and set aside.

Walnut Adjika

Prepare Walnut Adjika

In a food processor, combine 1 cup of walnuts, 1 medium red bell pepper (chopped), 2 cloves of garlic, and the entire bunch of fresh cilantro. Add 1 tsp of chili flakes and 2 tbs of olive oil. Blend until smooth, adding salt to taste. Adjust seasoning if necessary.

Prepare Spring Vegetables

Trim the asparagus and cut into bite-sized pieces. Slice the radishes thinly. In a skillet over medium heat, add a drizzle of olive oil and sauté the asparagus for about 3-4 minutes until tender. Add the peas and radishes, cooking for another 2 minutes until warmed through. Remove from heat and stir in 2 cups of baby spinach until just wilted.

Add Pumpkin

In a small saucepan, gently heat 1 cup of pumpkin puree, stirring until warmed through. Stir in 2 tbs of pumpkin seeds for added crunch.

Assembly

Assemble the Grain Bowl

In a large serving bowl, layer the cooked freekeh at the bottom. Top with the sautéed spring vegetables, followed by a generous dollop of walnut adjika. Finally, add the warmed pumpkin puree with pumpkin seeds on top. Serve immediately and enjoy!
