Filling Preparation

    Prepare the Cabbage

    Bring a large pot of salted water to a boil. Carefully remove 12 cabbage leaves from the head of cabbage. Blanch the leaves in boiling water for 2-3 minutes until tender. Remove and set aside to cool.

    Make the Filling

    In a large mixing bowl, combine ground beef, ground lamb, ground pork, cooked rice, chopped onion, minced garlic, salt, black pepper, dried dill, and the beaten egg. Mix thoroughly until all ingredients are well combined.

Assembly

    Roll the Cabbage

    Take a blanched cabbage leaf and place about 2 tablespoons of the meat mixture at the base of the leaf. Fold the sides over and roll tightly from the base up to the tip. Repeat for all leaves and filling.

Cooking

    Prepare the Sauce

    In a saucepan, combine tomato sauce, water, sugar, vinegar, salt, black pepper, and bay leaf. Bring to a simmer over medium heat and let it cook for about 10 minutes.

    Cook the Golubtsi

    In a large pot, place the rolled cabbage leaves seam-side down. Pour the prepared sauce over the rolls, ensuring they are well covered. Cover and simmer on low heat for about 1 hour.
