Puff Pastry Preparation

Place the pastry rectangles on a baking sheet lined with parchment paper. Bake for 15-20 minutes until golden and puffed. Let cool.

In a saucepan, heat the milk and granulated sugar over medium heat until warm but not boiling.

In a separate bowl, whisk together the egg yolks and cornstarch until combined.

Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened (about 5-7 minutes).

On a serving plate, place one puff pastry rectangle, spread a layer of grapefruit diplomat cream, and top with a layer of mandarin compote. Repeat the layers ending with a puff pastry on top.
