Pickle the Red Onion

Thinly slice the red onion and place it in a jar. In a small saucepan, bring the white vinegar to a boil. Pour the hot vinegar over the sliced onions, cover, and let them pickle for at least 30 minutes.

Prepare Brussels Sprouts

Preheat your oven to 425°F (220°C). Trim the ends of the Brussels sprouts and slice them in half. Toss them with olive oil, salt, and black pepper in a large bowl.

Roast Brussels Sprouts

Spread the Brussels sprouts on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until they are golden brown and crispy, flipping halfway through.

Prepare Spiced Pepitas

In a skillet, toast the pepitas over medium heat until they start to pop. Add cayenne pepper and paprika, stirring to coat the seeds. Cook for an additional 2-3 minutes until fragrant.

Assemble the Dish

Once the Brussels sprouts are roasted, remove them from the oven. Drizzle with Romesco sauce, top with pickled red onions, a squeeze of lime juice, and sprinkle the spiced pepitas on top.
