Preparation

1

Marinate the Fish

In a bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper. Add fresh herbs and mix well. Place fish fillets in the marinade and let sit for at least 30 minutes.

2

Prepare the Vegetables

Chop the seasonal vegetables into bite-sized pieces. Toss with olive oil, salt, and black pepper. Spread them out on a baking sheet.

Cooking

3

Roast the Vegetables

Preheat your oven to 400°F (200°C). Roast the prepared vegetables for 20-25 minutes or until tender and slightly caramelized.

4

Cook the Fish

On a grill or in a skillet, cook the marinated fish fillets over medium heat for about 4-5 minutes on each side, or until cooked through and flaky.

Serving

5

Plate the Dish

Serve the fish alongside the roasted vegetables. Add a side of fermented pickles and a drizzle of fermented hot sauce for an extra kick. Enjoy with family and friends!
