Juniper Base
If you have whole juniper berries and no cordial, lightly crush 3 berries in a spoon or mortar to release aroma. Combine 1 tbs juniper berry cordial (or 1 tbs juniper-infused syrup) with 60 ml non-alcoholic gin alternative and 15 ml fresh lime juice in a mixing glass.
Stir the mixture gently for about 10 seconds to marry flavors and slightly chill (no need to dilute much at this stage).
Tonic & Ice
Fill a highball or large stemmed glass with 6 large ice cubes to the top. Pour the juniper base over the ice.
Top gently with 150 ml of your chosen tonic water poured slowly down a spoon or the inside of the glass to preserve carbonation and create a layered look. Give the drink one gentle stir (2–3 rotations) to integrate without flattening the tonic.

Serve
Serve immediately while tonic is fizzy. Encourage your guest to give the drink a gentle stir before sipping to re-distribute aroma and flavor.
