Preparation

Make honey syrup (if not ready)

Combine equal parts honey and warm water (e.g., 1/4 cup honey + 1/4 cup water). Stir until homogenous and allow to cool. Keep refrigerated until use.

Cocktail assembly

Chill a coupe or martini glass by filling it with ice water while you prepare the cocktail.

Add 2 oz Isle of Harris Gin, 1/2 oz dry vermouth, 1/2 oz St. Germain, 1/2 oz fresh lemon juice, and 1/4 oz honey syrup to a cocktail shaker.

Add a pinch of fine sea salt and 2 dashes of orange bitters to the shaker. The salt brightens the botanicals and ties the coastal character of Isle of Harris gin to the cocktail.

Fill the shaker with ice and shake vigorously for 12–15 seconds until well-chilled and slightly diluted.

Discard the ice water from the chilled glass and double-strain the cocktail into the glass using a Hawthorne (and fine) strainer to remove ice shards and any pulp.

Express the oils of a lemon twist over the drink by pinching the twist skin-side down above the surface, then run the twist around the rim and drop it into the cocktail.

Garnish with a small sprig of edible heather or thyme floated on top for an aromatic seaside finish.
