Cucumber Simple Syrup (prepare ahead)

Make syrup

Combine 1 cup sugar and 1 cup water in a small saucepan over medium heat. Stir until sugar fully dissolves and the mixture comes to a gentle simmer.

Add the chopped cucumber to the saucepan, reduce heat to low, and simmer 3–4 minutes to extract flavor. Do not boil vigorously.

Remove from heat and let the mixture steep for 20–30 minutes, tasting for cucumber intensity.

Strain the syrup through a fine mesh sieve or cheesecloth into a clean jar, pressing on the cucumber solids to extract liquid. Cool completely. Refrigerate up to 2 weeks.

Cocktail Assembly

Chill a coupe or martini glass by filling with ice water while you prepare the cocktail.

Add Hendrick's gin (2 oz), elderflower liqueur (0.5 oz), fresh lime juice (0.5 oz), cucumber simple syrup (0.5 oz), dry vermouth (0.25 oz), and 1 dash of bitters to a cocktail shaker.

Fill the shaker with ice (enough to nearly fill the shaker). Secure the lid and shake vigorously for 12–15 seconds until the shaker exterior is very cold.

Discard the ice water from the chilled glass. Double-strain the cocktail into the chilled coupe or martini glass using both the shaker strainer and a fine mesh strainer to remove any ice shards or microscopic cucumber bits.

Garnish with a fresh cucumber wheel floated on the surface and an edible flower if desired. Serve immediately.
