Method
Prep frog legs
Clean and pat dry
If frozen, thaw frog legs completely and pat dry with paper towels. Trim any excess skin. Season both sides lightly with 1 tsp salt and 1/2 tsp black pepper; set aside for 10 minutes to come to room temperature.
Make dredge
In a shallow bowl or plate combine 1/2 cup all-purpose flour, 2 tbs cornstarch, 1/2 tsp smoked paprika, and 1/2 tsp garlic powder. Toss to combine. This will give a light, crisp coating that helps the glaze adhere.
Make spiced BC honey glaze
In a small saucepan over low heat, melt 2 tbs unsalted butter. Add 1/2 cup BC honey, 1 tbs soy sauce, 1 tsp rice vinegar, 1 tsp grated fresh ginger, 1/4 tsp red chili flakes and 1 tsp lime zest. Warm gently, stirring until glossy and slightly thickened (about 3–4 minutes). Do not boil. Remove from heat and keep warm. Taste and adjust: add a few drops of lime juice if you want brighter acidity, or more chili flakes for heat.
Make lime mignonette
In a small bowl combine 2 tbs finely minced shallot, 3 tbs fresh lime juice, 1 tbs champagne vinegar, 2 tsp extra-virgin olive oil, 1/2 tsp sugar, 1/4 tsp salt and 1/4 tsp freshly ground black pepper. Stir to dissolve sugar and salt. Fold in 1 tbs finely chopped cilantro if using. Let rest at room temperature for at least 10 minutes to allow flavors to meld.
Fry and glaze
Heat a heavy skillet or shallow frying pan over medium-high heat with 1 cup neutral oil to 350°F (175°C) — oil should shimmer but not smoke. Test with a pinch of flour: it should sizzle immediately.
Dredge each seasoned frog leg in the flour/cornstarch mixture, shaking off excess. Work in batches to avoid crowding; 3–4 legs per batch depending on pan size.
Add dredged frog legs to the hot oil and fry 2–3 minutes per side until golden brown and cooked through (internal temperature about 145°F/63°C). Total frying time is typically 4–6 minutes depending on size. Transfer to a wire rack or paper towel-lined tray to drain briefly (30–60 seconds).
Return skillet to medium-low heat and reduce oil to a thin film (or wipe skillet and add 1 tbs butter if you prefer less oil). Add the warm spiced BC honey glaze to the pan and warm 20–30 seconds until fluid but syrupy. Add fried frog legs back to the pan and toss quickly for 20–30 seconds to coat evenly and caramelize glaze slightly. Remove immediately to avoid burning the honey.
Finish and serve
Arrange glazed frog legs on a serving platter. Spoon a small amount (about 1–2 tsp) of the lime mignonette over each leg or serve the mignonette on the side for dipping. Garnish with microgreens or chopped parsley and lime wedges.
Serve immediately while hot and crispy. Suggestion: offer extra lime wedges and reserved glaze at the table for guests who want more sweet-spicy flavor.
