Strawberry Swirl

Place 1 cup sliced strawberries and 1 tablespoon sugar (from pantry) in a small saucepan. Cook over medium heat until berries break down, about 6–8 minutes. Mash slightly, simmer 1–2 minutes to thicken, then remove from heat and cool. Optionally pass through a fine sieve for smoothness. Chill until ready to use.

Chocolate Swirl

Melt 2 oz chopped dark chocolate with 1 tablespoon heavy cream in a small heatproof bowl over simmering water or in 20-second microwave bursts, stirring until smooth. Cool to warm (not hot).

Coffee Variation

Dissolve 2 teaspoons strong espresso or instant coffee in 1 tablespoon hot water. Chill.

Lemon Curd Swirl

Combine 1 tablespoon lemon juice and 1 teaspoon lemon zest with 1 tablespoon sugar in a small saucepan. Cook briefly to dissolve sugar, then cool. For thicker curd, fold in 1 tablespoon prepared lemon curd.

Make the Custard Base

Split vanilla bean lengthwise and scrape seeds into a medium saucepan (or add vanilla paste). Add 2 cups whole milk, 1 cup heavy cream, 3 tablespoons granulated sugar, 2 tablespoons powdered milk and 1 teaspoon fine sea salt. Whisk to combine and warm over medium heat until steam appears and edges begin to simmer (do not boil).

While milk heats, whisk 3 egg yolks in a medium bowl with 1 teaspoon cornstarch until smooth and slightly thickened. Temper the yolks by adding 1/3 cup of the hot milk mixture slowly while whisking constantly to raise their temperature without scrambling.

Return tempered yolk mixture to the saucepan. Cook over low-medium heat, stirring constantly with a wooden spoon or heatproof spatula, until custard thickens enough to coat the back of the spoon and reaches about 170–175°F (77–80°C) — about 3–5 minutes. Do not let it boil.

Remove from heat. If any curdled bits appear, pass the custard through a fine-mesh sieve into a clean bowl to ensure a silky base. Stir in the vanilla pod shell or discard it and adjust salt if needed.

Cool the custard quickly by placing the bowl in an ice bath and stirring occasionally until it reaches room temperature, then cover and chill in the refrigerator at least 2 hours, preferably overnight. Chilled base will freeze smoother in the machine.

Churn & Finish

Set up your soft-serve or ice cream machine according to manufacturer directions. Pour chilled custard base into the machine and churn until it reaches a soft-serve consistency — typically 15–25 minutes depending on machine (follow machine’s estimated time).

If you want a single-flavor soft serve (e.g., coffee), stir the chilled espresso concentrate into the base before churning. For other flavors that are sauces or swirls, reserve them to ripple in after churning.

Once the base is churned, transfer it to a piping bag or scoopable container. To create the du jour swirl: place some of the chosen swirl (strawberry, chocolate, lemon curd, caramel, etc.) in a narrow squeeze bottle or use a spoon. Pipe or spoon a thin ribbon of swirl into your serving container, add a few tablespoons of soft serve, repeat layering to create ribbons. Do not overmix — fold gently once or twice to create marbling, leaving visible streaks.

If using chopped nuts or sea salt, sprinkle them on top immediately. For a firmer scoop, transfer to a loaf pan, cover, and freeze 30–60 minutes.

Serve

Pipe or scoop directly into cones or cups. For classic soft-serve presentation, use a piping bag with a large star tip and swirl from the outside edge inward to create a peak.

Add optional drizzle of caramel or chocolate sauce and toasted nuts, and finish with a light pinch of sea salt if desired. Serve immediately for the best texture.
