Rinse and cook grains

Rinse the quinoa under cold water in a fine mesh sieve until water runs clear. In a small saucepan combine rinsed quinoa, brown rice, vegetable broth (or water), and 1/2 tsp sea salt. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer 18–20 minutes until liquid is absorbed and grains are tender. Remove from heat and let rest, covered, 5 minutes. Fluff with a fork and keep warm.

Marinate protein

In a medium bowl whisk together soy sauce, gochujang, honey (or maple), rice vinegar, sesame oil, grated ginger, and minced garlic. Add the chicken thigh pieces (cut into 1" cubes) or tofu cubes and toss to coat. Marinate at room temperature for 15 minutes or refrigerate for up to 2 hours for deeper flavor.

Cook protein

Heat a large nonstick skillet or wok over medium-high heat and add 1 tablespoon vegetable oil. If using chicken: add marinated chicken in a single layer, reserving excess marinade, and sear without moving for 2 minutes, then stir and continue cooking until cooked through and lightly caramelized, about 6–8 minutes total. If using tofu: add tofu cubes and cook until golden on multiple sides, about 6–8 minutes. Transfer cooked protein to a plate. Pour any leftover marinade into the skillet and cook 1–2 minutes until slightly thickened, then return protein to the pan and toss to glaze. Keep warm.

Stir-fry vegetables

In the same skillet or a clean wok, add the remaining 1 tablespoon vegetable oil and increase heat to high. Add sliced mushrooms and sauté 1–2 minutes until starting to brown. Add carrot julienne and red bell pepper and stir-fry 2–3 minutes until crisp-tender. Add chopped spinach or bok choy and half of the sliced scallions, and cook 1–2 minutes until greens wilt. Season with 1/4 tsp salt and 1/4 tsp black pepper. Return the glazed protein to the pan and toss gently to combine for 1 minute to marry flavors.

Make finishing sauce

In a small bowl whisk together the coconut milk, lime juice, and fish sauce (or extra soy). Taste and adjust seasoning—add extra gochujang or chile flakes to increase heat, or a pinch of sugar if you want more balance.

Assemble and serve

Divide the quinoa–brown rice base between 4 bowls (serving size below). Spoon the vegetable and protein mixture over the grains. Drizzle each bowl with about 1 tablespoon of the coconut–lime sauce (or more to taste). Garnish with toasted sesame seeds, chopped cilantro or Thai basil, crushed roasted peanuts, and the remaining sliced scallions. Serve immediately.
