Carefully rinse each betel (paan) leaf under cold water to remove dust. Pat dry with a clean towel or paper towel. Trim the stem close to the leaf and, if the central vein is very thick, you may shave off a little of the central vein on the underside so the leaf folds easily.

Prepare the leaves

In a small dry skillet over medium heat, toast the fennel seeds for 30–45 seconds until fragrant. Remove and let cool, then lightly crush with a mortar and pestle or the back of a spoon. If using cardamom pods whole, squeeze the seeds out and lightly crush them too. Coarsely chop chironji or nuts.

Toast and crush small seeds

In a small mixing bowl combine grated fresh coconut, chopped tutti-frutti, crushed fennel, crushed cardamom seeds, chopped chironji/nuts, and mukhwas if using. Add the sweetened condensed milk (if using) and saffron-soaked milk a little at a time and mix until the filling is slightly sticky and holds together. Fold in gulkand (reserve about 1/2 tbs per leaf to place on top when assembling). Taste and add mishri/powdered sugar if you want it sweeter.

Prepare filling mix

Lay a paan leaf flat, shiny side down, with the pointed end facing away from you. Place about 1 heaped teaspoon (about 8–10 g) of the coconut-tutti-frutti filling near the center of the leaf but slightly toward the stem end. Add 1/2 tbs gulkand on top of the filling. Sprinkle a pinch (about 1/4 tsp) of crushed cardamom, a few crushed fennel seeds, and 1/2 tbs chopped chironji/nuts. Add one crushed clove and one cardamom pod seed. If using mukhwas, sprinkle a little on top.

Assemble each paan

Fold the sides of the leaf in toward the center, then fold the stem end up over the filling and roll toward the pointed end to form a neat cone or rectangular parcel. Tuck the pointed end into the fold to secure. If the leaf doesn't hold, use a toothpick or clove to pin the folded paan at the stem end.

Fold the paan

Optionally brush the folded paan lightly with sweet fennel syrup or sugar syrup to add gloss and a touch of sweetness. Place a small square of silver vark on top and garnish with a rose petal if using. Repeat to assemble all paans. Serve immediately on a platter or keep covered in the refrigerator for up to 4 hours.

Finish and garnish

Combine 2 tbs sugar with 4 tbs water in a small saucepan. Bring to a simmer and cook until slightly thickened (about 3–4 minutes). Cool slightly before brushing on leaves.

Make quick sugar syrup (if using)

If you prefer a very soft filling, pulse the coconut, tutti-frutti and nuts briefly in a food processor for 2–3 short pulses before mixing with condensed milk and gulkand.

Place peeled and quartered potatoes in a saucepan and cover with cold water. Add a pinch of salt. Bring to a boil, then reduce heat and simmer for 12–15 minutes until tender when pierced with a fork. Drain thoroughly and let steam-dry for 2 minutes.

Boil potatoes

Transfer hot potatoes to a large bowl and mash until mostly smooth with a few small chunks remaining. Set aside.

Mash

In a wide skillet or nonstick pan, heat 2 tablespoons vegetable oil over medium heat. When hot, add mustard seeds and let them splutter (about 20 seconds). Add cumin seeds, asafoetida, curry leaves and chopped green chilies; sauté for 20–30 seconds until fragrant.

Heat oil and temper

Reduce heat to medium-low. Add dabeli masala (or substitute) and stir into the oil for 10–15 seconds to bloom the spices. Add turmeric, kashmiri chili powder, roasted cumin powder and coriander powder. Stir constantly for 10 seconds so spices don't burn.

Add spices

Add the mashed potatoes to the pan. Stir thoroughly to coat the potato with the tempered spice mixture. Add jaggery (or brown sugar), tamarind paste, salt and 1–2 tablespoons water to loosen and create a glossy, slightly saucy coating. Cook for 2–3 minutes, stirring, so flavors marry. Taste and adjust salt, jaggery or tamarind to achieve a balance of mildly sweet, tangy and spicy. Add lemon juice and mix. Remove from heat and keep warm.

Combine potatoes with spice mixture

Slice the pav horizontally, keeping one side attached if desired (like a bun hinge). Lightly toast or heat the inside on a griddle if preferred.

Slice pav

Heat a flat griddle or skillet over medium-low heat and add 1 tablespoon butter. Once melted, place pav cut-side down on the griddle and toast until golden and slightly crisp (about 60–90 seconds). Flip and toast the outer side for another 30–40 seconds. Repeat for remaining pav, adding remaining butter as needed.

Warm butter on griddle

Open a toasted pav, spread about 1 teaspoon green chutney and 1 teaspoon tamarind chutney on the insides. Place a generous heaping tablespoon (about 60–70 g) of the warm potato filling in each pav. Sprinkle finely chopped onion, a little roasted crushed peanut, pomegranate arils (if using), and a pinch of sev/farsan over the potato filling. Add a light drizzle of red chili garlic chutney for heat if desired. Close gently.

Fill buns

Press the closed pav gently so filling adheres. Optionally, smear a little butter on the outside and place back on the griddle for a few seconds to seal. Serve immediately with extra chutneys, sev and chopped coriander on the side for garnish.

Warm the milk to about 100–110°F (38–43°C). In a large bowl or the bowl of a stand mixer, whisk warm milk, sugar and yeast. Let sit 5–7 minutes until foamy. Add the softened butter and the egg and whisk to combine.

Activate and mix

Add the flour and salt to the bowl. If using a stand mixer, attach dough hook and mix on low until incorporated, then increase to medium and knead 6–8 minutes until smooth, elastic and slightly tacky. If mixing by hand, turn onto a floured surface and knead about 10 minutes until smooth.

Combine dry and wet

Shape dough into a ball, place in a lightly oiled bowl, cover with plastic wrap or a damp towel, and let rise in a warm draft-free place until doubled in size, about 60–75 minutes.

First rise

While dough rises, make the maska: in a small bowl, beat room-temperature butter with powdered sugar, cardamom powder and a pinch of salt until smooth and spreadable. Taste and adjust sweetness or cardamom. Transfer to the refrigerator briefly if it becomes too soft.

Prepare sweet butter (maska)

Once dough has doubled, gently deflate and turn onto a lightly floured surface. Divide into 10 equal pieces (about 70–80 g each for 3 cups flour). Roll each piece into a smooth ball, then flatten each ball into a 4–5 inch (10–12 cm) disk with a rolling pin.

Divide dough and roll

Place about 1 tablespoon of the sweet butter in the center of each disk. Fold the edges up and pinch to seal, forming a smooth bun with the seam on the bottom. Alternatively, for a layered maska bun, roll each disk into an oval, spread 1 tsp butter across the surface, then roll jelly-roll style, coil the roll into a bun and pinch seam closed.

Fill and shape buns

Place shaped buns seam-side down on a lined baking sheet, spacing them 1–2 inches apart. Cover loosely and let rise until puffy, about 30–40 minutes. Meanwhile, preheat oven to 375°F (190°C).

Second rise

Whisk the egg yolk with 1 tsp milk. Gently brush the tops of the risen buns with the egg wash. Sprinkle with sesame seeds or chopped pistachio if using.

Egg wash and garnish

Bake in the preheated oven for 14–18 minutes, until tops are deep golden brown and internal temperature reaches about 190°F (88°C). Rotate the pan halfway if your oven bakes unevenly.

Bake

Remove buns from oven and immediately brush tops with the 2 tbsp melted butter to give a glossy, rich finish. Let cool on a rack for 10 minutes before serving so the filling sets but remains spreadable.

Brush with butter

Serve warm or at room temperature. For serving, split open and add extra maska (butter) if desired. Keeps in an airtight container at room temperature for 2 days or refrigerated up to 5 days (bring to room temperature before serving).

Wash, peel and cube the potatoes. Break cauliflower into medium florets. Dice carrot, chop bell pepper, finely chop onion and tomatoes. Mince garlic and grate ginger. Keep green peas ready (if frozen, no need to thaw).

Prep vegetables

In a large pot or deep skillet, add the cubed potatoes, cauliflower florets, diced carrot and green peas. Add 1 to 1.25 cups of water (enough to come up about 1/3 of the vegetables). Cover and simmer over medium heat for 12–15 minutes until vegetables are fork-tender. If using a pressure cooker, cook 2 whistles and let pressure release. Drain any excess water but reserve about 1/4–1/2 cup of the cooking liquid.

Cook vegetables

While the vegetables cook, heat 2 tbs butter and 2 tbs oil in a wide heavy-bottomed skillet or kadhai over medium heat. Add the finely chopped onions and sauté 6–8 minutes until soft and lightly golden. Add the grated ginger, minced garlic and chopped green chilies; sauté 1 minute until fragrant.

Sauté aromatics

Add the chopped tomatoes (or puree) and cook 6–8 minutes until the tomatoes break down and the oil begins to separate slightly. Stir in pav bhaji masala (2 tbs), coriander powder (1 tsp), turmeric (1/4 tsp), red chili powder (1/2 tsp) and salt (1.5 tsp). Cook spices with the tomato mixture 2–3 minutes to bloom the flavors.

Add tomatoes and spices

Transfer the cooked vegetables into the tomato-spice mixture. Using a potato masher or the back of a large spoon, mash the potatoes, cauliflower and carrots to a coarse-smooth consistency — leave some small chunks for texture. If the mixture seems dry, add up to 1/2 cup of the reserved cooking liquid or additional water to reach a thick stew-like consistency. Simmer gently 6–8 minutes so flavors meld. Taste and adjust salt and spices.

Combine and mash

Stir in 2 tbs butter, lemon juice (1 tbs) and chopped cilantro (1/4 cup). Simmer 1–2 minutes, then turn off heat. The bhaji should be rich, glossy and spreadable but not runny.

Finish bhaji

For extra richness, heat 2 tbs butter in a small pan until melted and slightly foamy. Sprinkle the optional 1/2 tsp pav bhaji masala into the butter, swirl once and pour this tadka over the prepared bhaji. Garnish with the additional chopped cilantro and keep lemon wedges on the side.

Slice each pav horizontally leaving one edge intact if you prefer or fully split. Heat a flat griddle or skillet over medium heat. Add 1/2 tbs butter per pav (total 4 tbs) to the skillet and place pav halves cut-side down. Toast 1–2 minutes until golden and slightly crisp. Flip briefly to warm the other side if desired.

Toast pavs

Spoon generous portions of hot bhaji into a shallow bowl or plate, add a knob of butter on top if you like, and place 2 toasted pavs alongside. Serve immediately with chopped onions, extra cilantro and lemon wedges for squeezing over the bhaji.

In a small saucepan, bring 500 ml water to a gentle boil over medium-high heat.

Brew the base

Add 2 tablespoons black tea, crushed cardamom pods and sliced ginger to the boiling water. If using green tea leaves for a brighter top-note, add them now. Reduce heat to low and simmer gently for 3–4 minutes to extract flavor without excessive bitterness.

Add 3 teaspoons sugar to the spiced tea and stir until mostly dissolved. Pour in 300 ml whole milk and raise heat to medium. Watch carefully to prevent the milk from scalding.

Sweeten and combine with milk

Bring the mixture to a gentle simmer (do not boil vigorously) and simmer for 4–5 minutes while stirring occasionally so flavors meld and the tea deepens in color. Taste and adjust sweetness.

Remove from heat. Strain the chai into a teapot or directly into serving cups using a fine-mesh sieve to remove tea leaves, cardamom shells and ginger pieces.

Strain and finish

Pour the strained SwamiNarayan chai into warmed cups. Sprinkle a pinch (about 1 tsp) of finely chopped pistachios on top and dust with 1/4 teaspoon ground cardamom for aroma. Optionally add a small twist of lime or lemon on the rim for a subtle citrus contrast.

Serve immediately while hot. Leftover chai can be refrigerated for up to 24 hours and gently reheated; stir before serving.

Wash betel leaves gently under cold running water to remove grit. Pat dry with a clean towel or spin briefly in a salad spinner. Trim the stem ends if present so the leaf lies flat.

Prepare leaves

Place one leaf shiny side down (dull side up) on a flat work surface. The pointed tip should face away from you.

Using the back of a teaspoon, apply about 1/8 to 1/4 tsp of slaked lime paste in a thin line starting near the stem side and arcing toward the center. Spread very thinly — a little goes a long way. Repeat with about 1/8 to 1/4 tsp catechu (katha) paste beside the lime line. These two are traditional and provide the characteristic flavor; do not overapply.

In a small bowl, mix gulkand, sweet fennel seeds, desiccated coconut, crushed sweetened areca nut, tutti-frutti and cardamom powder until uniform. If using condensed milk or saffron, fold them into the filling now to adjust sweetness and texture.

Place approximately 1/2 tablespoon of the prepared sweet filling onto the area of the leaf where the lime and katha were applied. Do not overload — the filling should be a modest mound that allows folding.

If using mint leaves, tuck one small mint leaf into the filling for freshness. If using silver vark, cut small pieces to fit and lay on top of the filling.

To fold a triangular paan: fold the left corner of the leaf over the filling, then fold the right corner over so the two meet; fold the bottom (stem) up toward the tip to form a neat triangle. Alternatively, fold into a cone by folding one side over tightly and rolling to enclose filling.

If you want to secure the paan, use a clove or toothpick to pierce through the folded edge, or tie gently with a small strip of betel stem (if available).

Arrange finished paans on a plate. Serve immediately as a mouth freshener/digestif. If making ahead by a short time, keep wrapped loosely in plastic or in an airtight container lined with a damp paper towel to prevent drying for up to 2–3 hours.

Traditional paan often contains raw areca nut, which is linked to health risks with habitual use. This recipe uses commercially sweetened supari or can omit areca nut entirely. Also use slaked lime and catechu sparingly; excessive amounts may irritate the mouth.

Adjust sweetness and components to taste. Meetha paan is a customizable after-meal treat; try adding chocolate bits, fruit preserves, or saffron for variation.

Rinse the quinoa under cold water in a fine mesh sieve until water runs clear. In a small saucepan combine rinsed quinoa, brown rice, vegetable broth (or water), and 1/2 tsp sea salt. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer 18–20 minutes until liquid is absorbed and grains are tender. Remove from heat and let rest, covered, 5 minutes. Fluff with a fork and keep warm.
