    Chill equipment

    Place mixing bowl and beaters (or whisk) in the refrigerator for 15–20 minutes before starting. Cold equipment helps the cream whip faster and hold structure.

    Measure ingredients

    Remove bowl and beaters from the fridge. Pour 2 cups cold heavy cream into the chilled bowl. Add 2 tablespoons confectioners' sugar, 1 teaspoon vanilla extract, and a pinch of fine sea salt.

    Whip

    Using an electric hand mixer or stand mixer on medium speed, begin whipping the cream. Start at a low speed for about 15–20 seconds to prevent splatter, then increase to medium-high. Whip until soft peaks form (when you lift the beaters the peaks will curl over). This typically takes 3–5 minutes total depending on equipment and temperature.

    Adjust sweetness & texture

    Taste a small amount and add more confectioners' sugar (1/2 teaspoon at a time) if you want sweeter cream. If you prefer stiffer peaks (for piping or holding atop desserts), continue whipping another 30–90 seconds until firm peaks form (peaks hold shape with a slight tip). Be careful not to overwhip — butter will begin to form if whipped too long.

Optional Flavors / Stabilizers (incorporate during whipping)

    If you want to add any optional flavor or stabilizer, incorporate as follows: For cream of tartar, sift 1 tsp into the sugar before adding to the cream at the start; it helps strengthen the foam. For stabilized whipped cream using gelatin, bloom 1 teaspoon unflavored gelatin in 1 tablespoon cold water for 5 minutes, then gently warm until dissolved (do not boil). Let the gelatin cool to lukewarm (still liquid) and drizzle it into the whipping cream when it reaches soft peaks, then continue whipping to final consistency. For flavored variations, sift 1 teaspoon cocoa powder into the sugar for chocolate whipped cream, or add 1 teaspoon cooled espresso for coffee whipped cream, or 1 tsp maple syrup/honey instead of part of the sugar. Mix these in at the beginning so they incorporate as the cream whips.

Serving & Adding an Extra Scoop

    Spoon or pipe the whipped cream onto your dessert immediately if serving right away. If you want an extra scoop of cream: measure 1/2 cup additional whipped cream (prepared from the recipe above) and place it on top of the served portion. For a neat scoop, use an ice cream scoop or a large spoon chilled in the freezer for a minute.

    To store leftover whipped cream: keep in an airtight container in the refrigerator for up to 24 hours (stabilized versions last 2–3 days). If the cream deflates slightly, briefly re-whip by hand or with the mixer on low to restore some volume.
