Prepare Coating & Sprinkles

    Melt chocolate

    Chop or break the chocolate into small even pieces. Place chocolate in a microwave-safe bowl with the corn syrup and microwave at 50% power in 20–30 second intervals, stirring between each interval until smooth and glossy. If using a double boiler, set a heatproof bowl over simmering (not boiling) water and stir chocolate with corn syrup until melted. Stir in neutral oil if using to thin and add shine. The coating should be pourable but not very thin — aim for a thick ribbon when stirred.

    Prepare sprinkle stations

    Spread the rainbow jimmies, nonpareils, shredded coconut, crushed nuts, cookie crumbs, and mini chips into shallow bowls or rimmed plates. Leave space between each bowl so you can easily roll a cone into a chosen mix. If you want mixed sections (e.g., top half rainbow, bottom half coconut), prepare smaller bowls or a divided tray accordingly.

Dip & Roll Cones

    Work with one cone at a time. Hold the cone near the rim (or use a cone holder). Dip the cone into the melted chocolate about 1–1.5 inches down from the rim, twisting slightly so the chocolate coats evenly. Lift and allow excess to drip back into the bowl for 3–5 seconds.

    Immediately roll the chocolate-coated rim into your chosen sprinkle bowl so the sprinkles adhere to the melted chocolate. For a two-tone effect, dip then roll the top half in one mix and the lower half in another, or shake a small amount of an additional topping over the cone for pinpoints of texture.

    If you prefer a full interior chocolate barrier to reduce ice-cream sogginess, tilt the cone and use a spoon to drizzle a small amount of melted chocolate inside the cone, rotating so the inner wall receives a thin, even coating. Set the cone upright to allow the interior chocolate to set.

Set & Finish

    Place finished cones upright in a cone rack, muffin tin (invert into cups), or a deep glass so they don’t touch. Chill in the refrigerator for 10–15 minutes (or freezer for 3–5 minutes) until the chocolate is fully set.

    Optional: Warm the additional dark chocolate or colored candy melts briefly and drizzle over the hardened sprinkle coating for a decorative finish. If using sea salt, lightly sprinkle flakes over the cones before the drizzle sets so they adhere.

    Allow any drizzle to set (5–10 minutes at room temperature or 2–5 minutes chilled). Store cones in an airtight container at room temperature for up to 3 days or refrigerated for up to 7 days. Avoid stacking; use separators if needed.
