Base Ice Cream Custard

    Warm the dairy

    In a medium saucepan, combine 2 cups whole milk and 2 cups heavy cream. Warm over medium heat until small bubbles form around the edges and steam rises, about 5–7 minutes. Do not let it boil.

    Whisk sugar and yolks

    While the dairy warms, whisk 3 tablespoons granulated sugar with 4 large egg yolks in a medium bowl until the mixture is pale and slightly thickened, about 1–2 minutes.

    Temper the yolks

    Slowly ladle 1 cup of the hot milk-cream mixture into the yolks in a thin stream while whisking constantly to temper. This raises the yolks' temperature without cooking them.

    Cook the custard

    Pour the tempered yolk mixture back into the saucepan with the remaining milk-cream. Cook over medium-low heat, stirring constantly with a wooden spoon or heatproof spatula, scraping the bottom, until the custard thickens enough to coat the back of the spoon and a finger drawn across the back leaves a clear trail (nappe), about 5–8 minutes. Temperature should reach about 175–180°F (80–82°C) if using a thermometer.

    Strain and finish

    Remove the saucepan from heat and immediately strain the custard through a fine-mesh sieve into a clean bowl to remove any cooked egg bits. Stir in 1 teaspoon pure vanilla extract and a pinch of salt. Cool for 10–15 minutes at room temperature.

    Chill thoroughly

    Cover the bowl with plastic wrap, pressing the wrap directly onto the surface of the custard to prevent a skin from forming. Refrigerate until fully chilled, at least 4 hours or overnight for best texture.

Churning & Mix-ins

    Prepare ice cream maker

    Set up your ice cream maker according to the manufacturer's instructions. If it has a frozen bowl, ensure it has been frozen for the recommended time (usually 24 hours).

    Churn

    Pour the well-chilled custard into the ice cream maker and churn until it reaches a soft-serve consistency, typically 20–30 minutes depending on your machine.

    Add mix-ins

    During the last 3–5 minutes of churning, add 1/2 cup chocolate chips or chopped chocolate so they are evenly distributed.

    Harden

    Transfer the churned ice cream to a freezer-safe container, smooth the top with a spatula, and press a piece of parchment or plastic wrap directly onto the surface. Seal with a lid and freeze until firm, at least 2–4 hours for scoopable texture.

    Scoop ice cream into bowls or cones. If desired, sprinkle with a few flakes of sea salt (about 1/4 teaspoon divided) for contrast. Let scoops sit a minute at room temperature for easier serving.
