Prep and clean
Rinse the strawberries under cold running water for about 15–20 seconds to remove dirt. Gently pat them dry with a clean kitchen towel or paper towels. Remove the green hulls (stems) using a small paring knife or a strawberry huller, keeping berries whole if small or halving/quarting larger berries for even texture.

Sweeten and macerate
Place the prepared strawberries in a medium mixing bowl. Sprinkle the granulated sugar and lemon juice over the berries. Toss gently with a spatula or spoon to coat evenly. Let the berries sit at room temperature for 15–30 minutes so they macerate — the sugar will draw out their juices and create a light syrup. Taste after 15 minutes and add the optional 1 tsp of honey or maple syrup if you prefer them sweeter.

Adjust and serve
After macerating, gently stir the berries again. If there is extra liquid and you want a thicker presentation, spoon the berries out and reserve some of the syrup, or briefly drain. If serving with mint, finely chiffonade or tear the mint leaves and scatter over the berries. Transfer to a serving bowl or use as a topping for yogurt, pancakes, toast, ice cream, or desserts.

Garnish with mint leaves and serve immediately. If not using right away, cover and refrigerate the macerated strawberries for up to 48 hours; the texture will continue to soften over time.
