Prep crackers and chocolate
Break each graham cracker sheet into two squares so you have 16 flat halves. Place one square of milk chocolate on 8 of the graham cracker halves (one chocolate bar broken into 4 pieces or use 1 full standard bar per two s'mores). Arrange the remaining 8 cracker halves nearby to complete each sandwich once the marshmallows are toasted.

Prepare roasting sticks
If using wooden skewers, soak them in water for 10–15 minutes to reduce burning. If using metal skewers or roasting forks, wipe them clean and, if desired, rub a little unsalted butter on each tip to prevent marshmallow sticking.
Toasting Marshmallows (Campfire or Grill Method)

Toast over an open flame
Skewer one marshmallow on the end of a roasting stick. Hold the marshmallow 6–10 inches (15–25 cm) above the flame (not directly in the flame) and rotate slowly. Toast until the exterior is golden brown and the interior is gooey, typically 30–90 seconds depending on heat and distance. For a charred exterior, briefly move closer to the flame for small bursts.

Assemble the s'more
Immediately place the toasted marshmallow on top of the chocolate-topped graham cracker half. Top with the reserved graham cracker half and press gently for 5–10 seconds so the warm marshmallow melts the chocolate and binds the sandwich. Let cool for 10–20 seconds, then enjoy.

Preheat oven to 400°F (200°C). On a baking sheet lined with foil or parchment, arrange 8 graham cracker halves topped with chocolate. Place one marshmallow on each chocolate. Bake for 3–5 minutes until marshmallows puff and begin to brown. Watch closely to avoid burning.

Broiler method
Place the baking sheet under the broiler about 4–6 inches from heat. Broil 20–45 seconds—watch constantly—and remove when marshmallows are evenly golden. Immediately top each with the remaining graham cracker half, press gently, and serve.
Serving and Tips

Serve s'mores warm so the chocolate is melty. If making ahead for a group, keep assembled components warm on a low oven (about 175°F / 80°C) briefly, but best served immediately. Variations: use dark chocolate, salted caramel chocolate, peanut butter spread on crackers, or replace graham crackers with cookies.
